Raw Vegan Cheese

This vegan cheese recipe is made out of cashews with lemon and olives and it tastes JUST like the most delicious vegan cream cheese.

You can use this as a sauce, a dip, a spread or a filling. It is one of the most fabulous vegan recipes, and it is also entirely raw!

I absolutely love this recipe and it is incredibly versatile too.

It does make it easy if you have a powerful blender, such as a Vitamix, but if not, then you can also make it in a food processor, so just keep that in mind if your blender is not up to the task.

This recipe saved me many times when I was 100% raw (and now it’s just damn fine to enjoy while high raw), as it really does take any savory raw food recipe from good to AWESOME.

I love this cheese spread into sushi rolls, on flax crackers or as a salad dressing. As a sauce over cucumber noodles it is also magnificent.

Method:

Peel the lemon and add to the blender jug, then the celery (chopped) and olives.

Add the nuts to the blender last.

Blend.

Once the nuts start blending in, you may need to add a dash of water to help it along.

You may also prefer a thinner consistency if you’ll be using it as a sauce, or a thicker vegan cream cheese consistency if you want to spread it on crackers.

Taste test. You can now add anything you feel might be missing from the finished product. Some olives are saltier than others, and some lemons are more ‘lemony’ than others. If you can taste lemon overpoweringly, then add some more cashews. You may want to add some himalayan pink salts if it’s not salty enough.

Variations:

The above is the basic recipe. You can play with this in a variety of ways. Add sundried tomatoes for a delicious sundried tomato vegan cheese recipe, add a red bell pepper for a delicious salad dressing, add basil or coriander for a fabulous pasta sauce.

Any of the following ingredients can be added:

  • Dried or fresh herbs.
  • Salt
  • Pepper
  • Curry
  • Chilli
  • Sundried Tomatoes
  • Basil
  • Coriander
  • Red Bell Pepper
  • Fresh Tomato
  • Experiment with it, it works amazingly well any number of ways.

    You can also use different nuts. Pine Nuts work EXTREMELY well, and provide a very smoky flavor that is absolutely delicious. My favorite nuts to use are cashews and pine nuts, but go ahead and try others as well and see how you like them.
